Cat Nickles for the donation of the “Quarantine Cook Book“.
The Board of Directors for the donated EG Membership.
Cat Nickles is a recent 8th grade graduate of The Children’s School in Oak Park. For her Capstone project she originally planned to have a one night diner fundraiser at her school that would benefit Beyond Hunger (our local food pantry). She spent months researching recipes, prices, the ins and outs of running a restaurant (including a visit with her assigned mentor to a downtown restaurant). Then COVID 19 changed her plans. Cat pivoted to a cookbook that to this date has raised over $18,000 for Beyond Hunger. She has been featured in the local news as well as a national spot on Live with Kelly and Ryan. Cat’s cookbook is hand drawn, hand lettered, and hand colored. Cat will be a freshman at OPRF high school this fall.
